Whoa, did I not only post a recipe last week but this week too! Hurray for at-home cooking!
I'm joining Kierston at Candytfit this week again!
For Recipe Friday this week, I have a crockpot recipe that I enjoyed last week for many dinners and lunches:
Easy Crockpot Roast Beef with veggies
INGREDIENTS:
1 head of broccoli
1-2 zucchinis (or whatever veggies you want to use)
1 can of beef broth, I used the less sodium kind
1 can of green beans and/or 1 can of peas
1.5-2 lbs of beef: I used a cut of roast, any roast cut will do just fine
1 sprinkle of Adobe
1 tbsp of sea salt
METHOD:
Easy breezy! Cut meat into chunks and sear quickly on the stovetop. Then place pieces in crockpot along with all other ingredients except veggies. Turn crockpot on low for 2 hours. Cup up veggies and then add in to the crockpot mixture and stir everything. Cook on low for another 6-8 hours depending on desired tenderness of meat.
Cooks all day, so great for when you go to work or overnight!
I cooked spaghetti squash as a side (cut in half, take out seeds, drizzle olive oil over, bake on 375 for 45 minutes) and together with the recipe my lunches were packed with veggie power!

DeleteThanks for the recipe! Since I finally have someone to cook for, I love getting recipes from The Pioneer Woman. I made her shrimp scampi (super easy) and the shrimp tacos (get the flour tortillas instead of corn). Both were tasty and easy. She's got tons of great stuff on her site and the site is adorable.
